To celebrate our first issue, we’re sharing one of our favorite healthy recipes: Fresh Herb and Quinoa Salad. This dish is packed with nutrients and bursting with flavor, perfect for a quick lunch or a light dinner.

Ingredients:

  • 1 cup quinoa, rinsed

  • 2 cups water

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/4 cup red onion, finely chopped

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup fresh mint, chopped

  • 1/4 cup fresh cilantro, chopped

  • 1/4 cup olive oil

  • 2 tablespoons lemon juice

  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let cool.

  2. In a large bowl, combine the quinoa, cherry tomatoes, cucumber, red onion, parsley, mint, and cilantro.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the quinoa mixture and toss to combine.

  4. Serve immediately or refrigerate for up to 2 days.
